Fermented grains/horse mushroom/cured wagyu

This recipe came about on the fly. We had the fermented grains kicking about in the kitchen already and had been planning to serve them with the spanner crab as usual but there was no supply that week, so my mind turned instead to the mushrooms that Bruce had dropped off earlier that morning complete with a breezy greeting of, ‘I assume these are edible’. With the mushrooms grilled over the fire, the end result was uniquely comforting.

Ingredients

Quantity Ingredient
2 large horse mushrooms, trimmed and cleansed
clarified butter, for basting
salt flakes and freshly ground pepper
fermented grains, cooked and kept warm (see recipe below)
12 paper-thin slices cured wagyu bresaola

Method

  1. Baste the mushrooms with a little clarified butter and season with salt. Roast over a low fire, basting with extra clarified butter and turning when needed, until soft. Remove from the heat and cut into thumbnailsized pieces.

    Fold the mushroom pieces into the warm fermented grains and season to taste. Divide among bowls and cover each with three slices of the cured wagyu. Serve.

For the fermented grains

Ingredients

Quantity Ingredient
200g goat's milk
200g goat's whey
100g sheep's yoghurt
20g sugar
100g rye
100g millet
100g barley

Method

  1. Combine the goat’s milk, goat’s whey and yoghurt together in a bowl and whisk in the sugar.

    Put the grains in a separate large bowl, pour over the goat’s milk mixture and add the oregano, then cover with muslin and leave to ferment on a bench at a stable room temperature for 4–7 days, or until a skin has formed on top of the grain mix. The grains will start to smell bready when fermentation has begun. If mould appears on top of the mix then scrape it off.
