Before IGNI opened I cooked for a dinner in Melbourne with some friends from Sydney’s Pinbone restaurant. I didn’t really know what to do that night but I was in charge of dessert, so I threw this together and hoped for the best. It went down a storm, with one of the chefs approaching me afterwards and insisting it should be on the menu when we opened. The best sort of happy accident.

275g goat's milk
250g jersey cream
7 egg yolks
220g sugar

40g matcha powder
80g icing (confectioners’) sugar

Method

  1. For the ice cream, roast the seaweed sheets over a fire until crisp. Warm the milk and cream in a saucepan over a medium heat. Add the seaweed sheets, cover and leave to infuse overnight in the fridge.

    The next day, whisk the egg yolks and sugar together in a bowl until pale and fluffy. Warm the milk and cream infusion in the saucepan to 88°C (190°F) then carefully strain, removing the nori sheets. Pour over the egg mixture, beating slowly, until cooled, then transfer to the refrigerator to chill before pouring into an ice cream machine and churning until frozen. Keep in the freezer until needed.

    Preheat an oven to 150ºC (300ºF/Gas 2).

    Add the quinoa and salt to a saucepan with 600 ml (20½ floz) water and simmer until the quinoa is soft and overcooked and the water has almost evaporated. Transfer to a blender and blitz on high to form a purée. Spread the mixture out over a baking tray in a thin, even layer and cook in the oven for 15 minutes, or until golden and crisp.

    For the seaweed sugar, roast the seaweed sheets over a fire until crisp, then add them to a blender with the remaining ingredients and blitz to combine. Pass though a fine sieve.

    Plate as you wish.
