This is best as an accompaniment to stewed seasonal fruits.

Ingredients

Quantity Ingredient
415g cultured buttermilk
200g glucose
1 egg white

Method

  1. Add the buttermilk and glucose to a blender and blitz together, then add the egg white and blitz until combined. Strain, then add to an icecream maker and churn until frozen.
