In the summer you can make this sauce using fresh roma tomatoes. Good-quality passata will do just as well when tomatoes are not in season.

Ingredients

Quantity Ingredient
1 litre good-quality tomato passata
1/4 cup white wine or cider vinegar
1/4 cup soft brown sugar
1 tablespoon salt
2 tablespoons freshly ground white pepper
1/4 cup worcestershire sauce

Method

  1. Combine all the ingredients in a large saucepan. Bring to the boil, then lower the heat and simmer gently for 20 minutes, stirring from time to time.
  2. Allow to cool a little, then decant into 2 x 500 ml sterilised jars. Seal and keep refrigerated for up to 1 month.
