The classic accompaniment for roast lamb. When you make it yourself, it tastes so much better than any shop-bought stuff.

Ingredients

Quantity Ingredient
1 cup fresh mint leaves
2 tablespoons white sugar
1/4 cup boiling water
1/4 cup sherry vinegar
salt
freshly ground black pepper

Method

  1. Put the mint leaves and sugar into a mortar and pound to a coarse, gritty paste. Pour in the boiling water and stir to dissolve the sugar completely. Stir in the vinegar then season to taste. Leave to cool and serve with roast lamb.
