This is a book dedicated to the enjoyment of meat, and to my way of thinking that extends to the things that accompany it on the plate. Way back at the start of the book I talked a bit about how important I think it is for us to shift our focus from quantity to quality. It is a big ask, I realise, because inevitably, better quality meat costs more than the mass-produced stuff. But without banging you over the head with my ‘message’, I really hope that I’ve been able to persuade you to at least give a bit of thought to these issues. If you do make the shift – which I hope you will – it is probably going to mean you’ll be eating smaller portions of meat or better quality meat, less often.

And that’s why side dishes are so important!

Throughout the recipe chapters in this book you’ll see that I’ve made suggestions about the accompaniments that I think bring out the best in each meat dish. I don’t expect you to follow these ideas to the letter of course; they are just suggestions. What I do hope, is that you’ll spend a bit of time browsing through this chapter, and that you’ll have as much fun trying out the side dishes as the meat recipes themselves.

Here are some of my all-time favourite side dishes, grouped together as starch, vegetable dishes, and salads and dressings. I hope you’ll enjoy trying them.
