When it comes to salads, it can be all too easy to think of the usual suspects – lettuce, tomatoes, cucumbers and so on. Fresh herbs make a wonderful lively change and you can mix them up in your own favourite combinations. Add an avocado and roughly crumbled goat’s cheese and you’ve got a lovely summer starter.

Ingredients

Quantity Ingredient
1 cup parsley leaves
1/2 cup basil leaves
1/2 cup coriander leaves
1/2 cup chives, cut into 4 cm lengths
1 cup watercress sprigs
1 cup lettuce leaves, torn roughly
1 tablespoon lilliput capers
1 lemon, juiced
3 tablespoons extra-virgin olive oil
sea salt
freshly ground black pepper

Method

  1. Put all the herb and salad leaves and the capers into a large mixing bowl and toss them together gently. Whisk together the lemon juice and oil to make a dressing and pour it onto the salad. Season to taste and toss gently so that the leaves are evenly coated.
