Green bean salad with feta dressing

This is a great tasting and very healthy salad. To make the dressing I use one of my favourite cheeses, Danish feta, which is soft and creamy with a mild flavour.

Ingredients

Quantity Ingredient
500g green beans
1 red onion, very finely sliced
1/2 teaspoon salt
3 tablespoons white wine vinegar
1 garlic clove
100g danish feta
1 lemon, juiced
3 tablespoons extra-virgin olive oil
1/4 cup parsley, chopped

Method

  1. Trim the little stalky ends off the beans and the little tails, too, if you want.
  2. Blanch the beans in a large saucepan of boiling, salted water for 3–4 minutes then tip into iced water to cool. Lift them onto a tea towel and pat thoroughly dry.
  3. Toss the onion with ½ teaspoon of the salt and the vinegar and set aside for 5 minutes to reduce some of the sharp flavour. Rinse well and pat thoroughly dry.
  4. Use the back of a knife to crush the garlic with ½ teaspoon salt until you have a smooth paste. Combine with the feta, lemon juice and oil in a food processor and blend to make a creamy dressing.
  5. Place the beans, onion and parsley in a large mixing bowl and pour on the dressing. Toss to combine and serve straight away.
