666 Autumn Butter Vodka from Tasmania is infused with local butter through a technique known as fat-washing. (Liquid fats such as oils or melted butter are mixed with spirits, and the mixture is left to infuse, adding richness and savoury flavour to the spirits. Then the mix is chilled, and the fat gets scooped off once solidified.) If you can’t get your hands on this vodka, don’t stress! There’s a recipe in this book if you feel like throwing your hat in. Or use another quality vodka and your drink will still be super tasty.

Ingredients

Quantity Ingredient
30ml spiced rum
30ml 666 autumn butter vodka
or Butter-washed vodka
30ml chilled espresso
20ml Honey syrup
2 drops Cardamom tincture
2–3 coffee beans, to garnish

Method

  1. Shake all the ingredients, except the coffee beans, without ice to create a foam. Add ice and shake again. Pass through a small fine-meshed strainer into a martini or coupe glass and garnish with the coffee beans.
