Kale and ginger margarita

Ingredients

Quantity Ingredient
sea salt (or smoked sea salt, for an earthy winter twist)
wedge lime, plus 30ml lime juice
coin ginger, sliced 1cm thick
60ml blanco tequila
30ml kale juice
20ml Sugar syrup

Method

  1. Put a little salt in a shallow bowl. Wipe the lime wedge around the outside rim of a martini or coupe glass to wet it. Tilt the bowl slightly so the salt gathers up one end, and dip and turn the rim of the glass in the salt until it is coated all around. Shake off any excess. Muddle the ginger in the bottom of a shaker. Add the remaining ingredients and shake hard with ice. Pass through a small fine-meshed strainer into the glass.
