A juniper-heavy gin is what you want here (Tanqueray No. Ten, which also contains citrus, including grapefruit, would be ideal). Long pepper is a relation of common pepper consisting of many tiny pepper berries clustered on small brown spikes; it’s slightly hotter than common pepper and has a numbing eff ect. If you can’t find long pepper, use black, green, white or sichuan peppercorns instead.

Ingredients

Quantity Ingredient
30ml gin
100ml tonic water
wedge pink grapefruit
2–3 long peppers to garnish

Method

  1. Combine the gin and tonic in a large wine glass and add ice. Squeeze in the juice from the grapefruit wedge and drop the wedge into the glass, along with the peppers. Stir gently.
