The only problem with figs is that their season is short! Make a big batch of Fig and thyme syrup and freeze it so you can enjoy the flavour of figs well after they’ve come and gone. Thyme is a classic pairing with the fruit, but you can play around with other herbs too.

Ingredients

Quantity Ingredient
60ml dry vermouth
30ml lemon juice
30ml Fig leaf tincture
45ml soda water
sprig thyme, to garnish

Method

  1. Shake the vermouth, lemon juice and fig syrup with ice. Strain (removing the ice) into a highball or tall glass containing fresh ice. Top with the soda water and stir gently. Garnish with the thyme.
