Apéro, apéritif, aperitivo: these drinks are one and the same. They’re generally consumed in the afternoon or early evening before dinner, and are based on wine, vermouth or amaro (Italian bitter liqueur). They are low in alcohol and super refreshing.

Ingredients

Quantity Ingredient
60ml fino sherry
30ml plum purée (see below)
30ml soda water
2 sprigs lemon thyme, to garnish

Plum purée (makes 580ml)

Quantity Ingredient
500g any variety of plums, stoned and roughly chopped
100ml Sugar syrup

Method

  1. To make the Plum purée, combine the fruit and syrup in a food processor and blitz on high until smooth. The purée can be stored in a jar or bottle in the refrigerator for up to 1 week.
  2. Combine the sherry and plum purée in a wine glass. Add ice and stir, then add the soda water and gently stir again. Garnish with the lemon thyme.
