Ingredients

Quantity Ingredient
1/2 blood plum, plus a finely sliced wheel to garnish
45ml blended scotch whisky
15ml umeshu (japanese plum wine)
30ml lemon juice
15ml Sugar syrup
1–2 teaspoons egg white

Method

  1. Muddle the plum in the bottom of a shaker, then add the remaining ingredients. Shake without ice first, to create a foam. Then shake again with ice. Pass through a small finemeshed strainer into a wine glass and serve neat with the wheel of plum floating on top.
