Ingredients

Quantity Ingredient
40ml añejo rum
20ml amontillado sherry
30ml lemon juice
30ml Apricot, nectarine or plum purée
wheel of fresh apricot to garnish

Method

  1. Shake all the ingredients, except the wheel of apricot, with ice. Pass through a small fine-meshed strainer into a martini or coupe glass. Float the wheel of apricot on top.
