Ingredients

Quantity Ingredient
4 cherries, halved and pitted, plus an extra cherry to garnish
60ml pisco
30ml lemon juice
20ml Sugar syrup
1-2 teaspoons egg white
2 dashes bitters (preferably peychaud's)

Method

  1. Muddle the cherries in the bottom of a shaker. Add the remaining ingredients and shake without ice to create a foam. Shake again with ice. Pass through a small fine-meshed strainer into a martini or coupe glass. Garnish with a whole cherry.
