Ingredients

Quantity Ingredient
3 lychees
3 slices dragon fruit, skin on
60ml dry vermouth
15ml gin
15ml lime juice
15ml lemon juice
pulp of 1/2 passionfruit
20ml Sugar syrup
sprig mint, to garnish

Method

  1. Muddle the lychees and 2 slices of the dragon fruit in the bottom of a shaker. Add the remaining ingredients, except the last slice of dragon fruit and the mint, and shake with ice. Pass through a small fine-meshed strainer into a highball or tall glass containing fresh crushed ice. Add the remaining slice of dragon fruit and the mint.
