‘Tiki’ is a tropical category of cocktails generally made with rum, fruit such as pineapple, and sometimes spices. This one contains Chartreuse, a liqueur invented by French monks. Thus, the Tiki Monk! It also uses homemade fruit syrup, or alternatively pineapple gum syrup, which you can buy in small bottles. (Gum syrup is sugar syrup containing a resin known as gum arabic, which adds viscosity and silkiness to cocktails; pineapple gum syrup is simply gum syrup infused with pineapple.)

Ingredients

Quantity Ingredient
2 small chunks pineapple
30ml añejo rum
30ml yellow chartreuse
30ml lime juice, plus a wheel to garnish
15ml Pineapple and tangelo syrup
3 dashes bitters (preferably angostura)

Method

  1. Muddle the pineapple in the bottom of a shaker. Add the remaining ingredients and shake with ice. Pass through a small fine-meshed strainer into a martini or coupe glass and float the lime wheel on top.
