Shichimi togarashi is a Japanese spice mix featuring chilli and other interesting spices typically sold in small, red-capped shakers. You should be able to find it in most Asian grocers.

Ingredients

Quantity Ingredient
1/2 teaspoon shichimi togarashi
1/2 teaspoon sea salt
wedge of lime, plus 30 ml lime juice
60ml blanco tequila
45ml watermelon juice
10ml Sugar syrup

Method

  1. Combine the shichimi togarashi and salt in a shallow bowl and mix well. Wipe the lime wedge around the outside rim of a martini or coupe glass to wet it. Tilt the bowl slightly so the spice mixture gathers up one end, and dip and turn the rim of the glass in the spice until it is coated all around. Shake off any excess. Shake all the remaining ingredients with ice, then pass through a small fine-meshed strainer into the glass.
