Here is a honeysuckle twist on the French 75, a classic cocktail made with gin, Champagne, lemon juice and sugar. Honeysuckles are shrubs or vines with scented trumpet-shaped flowers that come in a range of colours, such as creamy white, yellow and peach. They are trellised along fences all around Sydney, Australia. Look out for honeysuckle in friends’ gardens!

Ingredients

Quantity Ingredient
45ml gin
20ml lemon juice, plus a long, thin strip of lemon zest
15ml Honeysuckle syrup
60ml sparkling white wine

Method

  1. Shake the gin, lemon juice and honeysuckle syrup with ice. Strain (removing the ice) into a flute and top with the sparkling wine. Squeeze the strip of lemon zest to release its oils and add it to the glass.
