Ingredients

Quantity Ingredient
45ml white rum
15ml aperol
15ml lemon juice
15ml lime juice
30ml Rhubarb syrup
6 mint leaves, plus a sprig to garnish
60ml see method for ingredients, soda water
long slice of rhubarb to garnish

Method

  1. Shake all the ingredients, except the garnishes and soda water, with ice. Pass through a small fine-meshed strainer into a highball or tall glass containing fresh ice. Top with the soda water and stir gently. Garnish with the rhubarb and the sprig of mint.
