Ingredients

Quantity Ingredient
5 mulberries, plus extra to garnish
45ml rye whisky
15ml averna
30ml lemon juice, plus a wedge to garnish
20ml Sugar syrup
1–2 teaspoons egg white

Method

  1. Muddle the mulberries in the bottom of a shaker. Add the remaining ingredients, except the garnishes, and shake without ice to create a foam. Shake again with ice. Pass through a small fine-meshed strainer into a rocks or short glass containing fresh ice. Add a couple of extra mulberries and the wedge of lemon.
