Sorrel looks like spinach but has a lemony flavour. One variety to look out for is the beautiful red-veined sorrel. Both common and red-veined sorrel will work in this recipe, as will the unrelated plant called wood sorrel or oxalis, which has a clover-like leaf and is a common weed.

Ingredients

Quantity Ingredient
handful sorrel, plus a few extra leaves to garnish
15ml Sugar syrup
60ml gin
20ml lemon juice
20ml grapefruit juice, plus a half-wheel to garnish

Method

  1. Muddle the sorrel with the sugar syrup in the bottom of a shaker. Add the gin and citrus juices and shake with ice. Pass through a small fine-meshed strainer into a short glass containing fresh ice. Garnish with the half-wheel of grapefruit and the extra sorrel leaves.
