Ingredients

Quantity Ingredient
2 medium beetroots, peeled and finely sliced
300ml gin

Method

  1. Combine the beetroot slices and gin in a large jar, sealing with a lid. The beetroot colour will bleed into the gin fairly quickly, but for maximum flavour it’s best to leave the jar in a cool, dark place for 3 days. Strain out the beetroot and store your infused gin in a bottle in the refrigerator. It should last 1–2 days before losing its vibrant colour due to oxidisation.
