Ingredients

125g unsalted butter
375ml vodka

Method

  1. Gently heat the butter until just melted. Combine the butter and vodka in a container and stir to combine. Seal and leave to sit at room temperature for 3 hours, then transfer to the refrigerator and leave for 1–2 hours, until the butter has solidified. Scoop off the layer of butter and pass the vodka through a fine-meshed sieve. Store in a bottle in the refrigerator for up to 1 week.
