Ingredients

Quantity Ingredient
240g sugar
200g ginger, finely sliced
500ml water

Method

  1. Combine all the ingredients in a saucepan and bring to the boil, stirring until the sugar dissolves. Reduce the heat and simmer, uncovered, for 10 minutes. Allow to cool, then strain off the ginger. This syrup can be stored in a jar or bottle in the refrigerator for up to 1 month.
