Ingredients

Quantity Ingredient
500g pumpkin, peeled and roughly chopped
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground allspice
100ml Sugar syrup

Method

  1. Toss the pumpkin with the spices on a non-stick baking tray (or a tray lined with baking paper). Spread the pumpkin evenly across the tray. Bake at 180°C (350°F) for 30–45 minutes, or until soft. Leave to cool, then combine the pumpkin and sugar syrup in a food processor or blender and blitz on high until smooth. The purée can be stored in a jar or bottle inthe refrigerator for up to 1 week.
