When making tinctures, use the highest-proof spirit you can get your hands on, as it will extract more flavour from your ingredient (in this case, walnuts). Use a dropper or an atomiser — or alternatively a teaspoon — to add tinctures to drinks in very small doses.

Ingredients

Quantity Ingredient
125ml 100-proof (or higher) vodka
70g walnuts, finely chopped

Method

  1. Combine the vodka and walnuts in a sealable jar and leave in a cool, dark place for about 1 week, stirring and tasting each day. The tincture should develop a strong walnut flavour, but be careful it doesn’t become bitter. Strain through muslin (cheesecloth) or through a coffee filter paper, discarding the walnuts. Store in a small bottle in the refrigerator, where the tincture will last for months if not years.
