This is a recipe from my late grandmother, Saba Eckhaus – her poppy seed cake was legendary, and when my mum went into catering it would appear on many afternoon tea tables. The grated apple and oil makes it really light. I’ve made the icing dairy-free so it can be served after a meat meal, but make a more decadent chocolate ganache using cream if you’re serving it after fish.

Ingredients

9 eggs, separated
345g caster (superfine) sugar
3/4 teaspoon natural vanilla extact
3 green apples, peeled, cored and grated
3/4 teaspoon baking powder
35g self-raising flour
400g poppy seeds

Dairy-free chocolate ganache

Quantity Ingredient
500g dairy-free dark chocolate couverture, broken into pieces
350ml almond or soy milk
1 tablespoon liquid glucose

Method

  1. Preheat the oven to 180°C. Grease a 25 cm springform cake tin and line it with baking paper.
  2. Using an electric mixer, beat the egg yolks and sugar in a large mixing bowl until fluffy and pale in colour. Add the vanilla, stirring to mix well, then add the remaining ingredients.
  3. In another large bowl, beat the egg whites using a clean electric mixer until stiff peaks form. Gently fold into the batter using a metal spoon.
  4. Pour the mixture into the pre-prepared tin, cover with foil, and bake in the oven for 45 minutes.
  5. Remove the foil and bake for another 45 minutes.
  6. Remove and cool the cake in the tin for 30 minutes before turning it out of the tin onto a wire rack to cool completely.
  7. While the cake is cooling, make the ganache. Melt the chocolate in a double boiler. Heat the milk in a saucepan over medium heat until just below boiling point. Remove from the heat and pour the milk over the chocolate. Add the glucose and stir gently until you have a smooth, shiny ganache.
  8. Spread the ganache over the cake and cut into slices to serve.
