This is the most common way of enjoying rice as part of a Vietnamese meal and is the backbone of Vietnamese cuisine.

3 cups long-grain rice

Method

  1. Place the rice into a large colander or sieve and rinse under cold running water. Place your hand in the centre of the rice and move it in a circular motion, ensuring that the water runs freely over all of the rice. When the water runs clear, allow the rice to drain.
  2. Place the rice in an electric rice cooker and cover with water. The water should come up to your first knuckle when the tip of your index finger is resting on top of the rice. Cook according to the rice cooker’s instructions.
  3. Alternatively, place the rice and 4½ cups water into a saucepan, and bring to the boil. Cover immediately, and reduce the heat. Cook for 20 minutes then allow the rice to rest for a further 10 minutes before serving.
