Ingredients

Quantity Ingredient
1/2 cup rice vinegar
2 teaspoons salt
1/4 teaspoon caster sugar
500g bean sprouts
1 long cucumber, peeled and cut into 5 cm batons
1/2 pineapple, cut into 5 cm batons
1 long red chilli, seeded and chopped

Method

  1. To make the pickling liquid, heat the vinegar, salt and sugar in a small saucepan until the sugar has completely dissolved. Allow to cool until lukewarm.
  2. Combine the bean sprouts, cucumber, pineapple and chilli in a bowl.
  3. Pour the cooled pickling liquid over and lightly toss through. Allow to sit for 30 minutes before serving.
