Ingredients

Quantity Ingredient
800g water spinach
vegetable oil, for frying
3 garlic cloves, thinly sliced

Method

  1. Bring a large saucepan of water to the boil. Thoroughly wash the spinach in cold water and discard any bruised leaves.
  2. Drop the water spinach into the boiling water for 1 minute, then drain.
  3. Heat the oil in a wok over high heat and fry the garlic for 1–2 minutes, or until fragrant. Add the water spinach and toss through the garlic. Serve immediately.
