Originally a local Hanoi dish, it is now widely available throughout Vietnam. This salad works equally well with duck or chicken.

Ingredients

Quantity Ingredient
1 banana flower
2 limes, juiced
180g pork fillet
12 cooked tiger prawns, shelled and deveined, cut in half lengthwise
3 red asian shallots, finely sliced
100g bean sprouts
1 large handful coriander leaves, roughly chopped
2 1/2 tablespoons roasted unsalted peanuts, chopped, plus 2 teaspoons extra for garnish

Dressing

Quantity Ingredient
120g caster sugar
100ml lime juice
3 tablespoons fish sauce
1 long red chilli, seeded and finely chopped
2 garlic cloves, finely chopped

Method

  1. Pull off any bruised outer petals from the banana flower, then gently remove six tender petals and set aside for presentation. Slice the remaining flower very thinly, discarding any of the banana shoots between the petals. Soak the sliced banana flower in water that has had the lime juice added for 15 minutes. This allows the banana flower to soften slightly without discolouring.
  2. While the banana flower is soaking, season the pork and cook in a non-stick frying pan over medium heat for 3–4 minutes each side, or until cooked through. Remove the pork and allow it to rest for 5 minutes before thinly slicing. Resting the meat ensures that the juices flow back through it and do not end up on the chopping board when you slice it.
  3. For the dressing, mix all the ingredients together in a bowl until the sugar has dissolved.
  4. To assemble the salad, thoroughly drain the sliced banana flower and pat dry with paper towel. Place in a large bowl with the pork, prawns, shallots, bean sprouts, coriander and peanuts. Add the dressing and gently toss.
  5. Place the salad into the reserved banana flower petals and sprinkle with the extra peanuts.
