Ingredients

Quantity Ingredient
2 egg yolks
3 teaspoons lime juice or rice vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
200ml vegetable oil

Method

  1. Before you start, ensure all the ingredients are at room temperature, as this will result in a more stable mayonnaise.
  2. Place the egg yolks, lime juice, salt and pepper in a bowl and beat with a wire whisk for 40-60 seconds, until the eggs slightly thicken.
  3. Keep whisking, and in a slow steady stream pour in the oil, ensuring it is fully emulsified into the egg yolks. This should take 4-5 minutes, or will happen more quickly if using an electric mixer or food processor.
  4. Use immediately, or cover and store in the refrigerator for up to 1 week.
