100g long-grain white rice

Method

  1. Heat a wok or heavy-based frying pan over high heat. Add the rice and reduce the heat to medium.
  2. Using a wooden spoon, keep the rice moving in the wok for 4-5 minutes, until lightly golden all over.
  3. Remove from the heat and pound the rice to a fine powder using a mortar and pestle.
  4. Store in an airtight container in a cool, dark place for up to 2 months.
