Ingredients

Quantity Ingredient
250ml coconut milk
2 teaspoons sugar
1 pandan leaf, crushed
2 teaspoons cornflour, mixed to a smooth paste with 1 tablespoon cold water

Method

  1. Put the coconut milk, sugar and pandan in a small pan with a pinch of salt. Slowly bring to simmering point. Remove from the heat and infuse for 20 minutes. Strain into a clean pan.
  2. Bring the sauce back to simmering point. Add the cornflour mixture and stir for 1 minute, until the sauce thickens, and the raw cornflour taste has cooked out. Serve warm.
