200g tamarind pulp, broken into small pieces

Method

  1. Soak the tamarind in 100 ml warm water for 15 minutes, mashing the pulp now and then with a spoon. Pass the mixture through a sieve, discarding water can be refrigerated in a sealed jar for 3 weeks.
