Barbecued pork ribs with sesame seeds and green chilli dipping salt

Tracey and I enjoyed a wonderful version of this dish in Buon Ma Thuot in the Central Highlands, where the green chilli which gives the dipping sauce that special edge, is grown.

Ash your butcher to cut the pork ribs through the bone into 5 cm pieces.

Ingredients

Quantity Ingredient
1.5kg pork ribs, cut into 5 cm pieces
1 small handful mint
Green chilli dipping salt, to serve
Sticky rice, to serve

Marinade

Quantity Ingredient
2 garlic cloves, roughly chopped
2 red asian shallots, roughly chopped
3 lemongrass stems, roughly chopped, white part only
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon five-spice
1 teaspoon sugar
1/2 teaspoon freshly ground black pepper
1 1/2 sesame seeds

Method

  1. Place the pork in a shallow tray.
  2. Combine the marinade ingredients in a bowl, stirring to dissolve the sugar. Coat the ribs with the marinade, cover with plastic wrap and marinate in the refrigerator for 8 hours, or overnight.
  3. Remove the ribs from the refrigerator about 30 minutes before you wish to cook them.
  4. Heat a barbecue or chargrill to medium. Cook the ribs for 8-1 0 minutes on each side, until they are cooked through and a deep golden colour.
  5. Serve the ribs scattered with the mint, with the dipping salt and sticky rice on the side.
