Sticky rice is ideal for soaking up the juices of your favourite dishes at the end of a meal.

Ingredients

Quantity Ingredient
600g glutinous rice
1 teaspoon salt
Peanut and sesame mix, to serve

Method

  1. Soak the rice in cold water for a minimum of 4 hours, or overnight if more convenient.
  2. Drain the rice and rinse under cold water until the water runs clear.
  3. Sprinkle the rice with the salt and place in a bamboo steamer lined with muslin. Cover and steam for 30 minutes. Remove the lid from the steamer and check that the rice is cooked - it should be tender all the way through.
  4. Serve immediately, or cover with a damp cloth to prevent the rice drying out and hardening.
  5. Eat the rice with your fingers, dipping it into the peanut and sesame mix.
