Here's a great example of the Vietnamese not wasting anything. When using jackfruit in other dishes, make sure you keep the seeds for this recipe. The boiled seeds taste a little like chestnuts and make a healthy, nutritious snack.

Ingredients

150g jackfruit seeds

Method

  1. Place the seeds in a saucepan, cover with cold water and bring to the boil. Reduce the heat and simmer for 15-20 minutes, or until a bamboo skewer easily passes through the seeds.
  2. Drain the seeds and allow to cool before eating.
  3. The seeds are best eaten the day they are made, dipped into a little sea salt if desired.
