Jicama is a root vegetable from South and Central America that resembles a turnip. Like choko, It very likely made its way to Vietnam in the 17th end 18th centuries via trading routes from Central America to the Philippines, then onwards to the trading port of Hoi An.

The taste of its firm white flesh has been described as a cross between water chestnut and apple. Jicama works particularly well in salads, as it adds a crisp freshness and doesn't discolour when exposed to air.

Ingredients

Quantity Ingredient
300g boneless, skinless chicken breasts
1 jicama, peeled and cut into thln slices
2 tablespoons sesame seeds, toasted
3 red asian shallots, thinly sliced
1 carrot, cut into long, thin strips
1 handful coriander
4 kaffir lime leaves, cut into thin strips
1 long red chilli, seeded and cut into thin strips
1 tablespoon Fried shallots

Dressing

Quantity Ingredient
100ml lime juice
120g sugar
60ml fish sauce
2 garlic cloves, finely chopped

Method

  1. Bring a small saucepan of salted water to the boil. Add the chicken, reduce the heat and simmer for 8-10 minutes, or until just cooked through. Transfer to a chopping board, leave to cool, then cut or shred the chicken into thin strips. Place in a large bowl.
  2. Add the jicama, sesame seeds, shallot, carrot, coriander, lime Ieaves and chilli to the chicken.
  3. To make the dressing, whisk together the sugar and lime juice until the sugar has completely dissolved. Stir in the fish sauce and garlic.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Serve on a large platter, sprinkled with the fried shallots.
