500ml grapeseed oil
6 red asian shallots, thinly sliced

Method

  1. In a large, heavy-based saucepan heat the oil to 160°C.
  2. Meanwhile, set a sieve over a similar-sized pan and line a tray with paper towel.
  3. Add the sliced shallots to the oil, stirring continuously. When the shallots are lightly golden in colour, pour the shallots into the sieve and drain well. Tip the shallots out onto the tray and use a fork to separate them, which also helps to cool them down. Store in an airtight container for 1–2 days.
