Ingredients

Quantity Ingredient
6 long red chillies, halved lengthways and seeded
60ml rice wine vinegar
2 tablespoons sugar
2 teaspoons salt

Method

  1. Put the chillies in a bowl.
  2. In a small saucepan over medium heat, put the vinegar, 125 ml water, the sugar and salt and cook until the sugar has dissolved, taking care not to let it boil.
  3. Remove the pan from the heat and pour the pickling liquid over the chillies. Leave overnight to marinate. Drain.
  4. In an upright blender, purée the chillies with a little of the pickling liquid until smooth. Store in the refrigerator.
