Ingredients

Quantity Ingredient
6 red asian shallots, thinly sliced
60ml rice wine vinegar
2 tablespoons sugar
2 teaspoons salt

Method

  1. Put the shallots in a bowl.
  2. In a small saucepan over medium heat, warm the remaining ingredients with 125 ml water until the sugar has dissolved, taking care not to let it boil. Remove the pan from the heat and let it cool for 10 minutes.
  3. Pour the pickling liquid over the shallots and leave them to pickle for at least 2 hours before serving. Use immediately.
