Ingredients

125ml grapeseed oil
100g green spring onion tops, roughly chopped

Method

  1. Heat the oil in a saucepan to 70°C. Add the spring onion and remove the pan from the heat. Leave to cool for 3 minutes.
  2. Transfer to an upright blender and purée for 2 minutes at high speed. Set aside in the refrigerator to cool. Leave for 1 hour before straining through a fine sieve. Store in an airtight container in the refrigerator for up to 2 days.
