Candied walnuts with toasted nori

This recipe is based on a snack I first ate in Hong Kong. It has an arresting flavour that’s both sweet and savoury.

Ingredients

Quantity Ingredient
125g walnuts
2 tablespoons liquid glucose
1 tablespoon sugar
2 tablespoons sesame seeds
1 sheet nori

Method

  1. Preheat the oven to 170°C and line a baking tray with baking paper.
  2. Bring a medium saucepan of water to the boil. Add the walnuts and bring the water back to the boil. Immediately drain the walnuts and set aside.
  3. In a small saucepan over medium heat, warm the glucose and sugar. Add the walnuts and stir quickly to coat them thoroughly. As you stir the walnuts, gradually sprinkle in the sesame seeds so they evenly coat the nuts.
  4. Spread the walnuts on the lined baking tray and bake in the oven for 15–20 minutes, stirring every 5 minutes until the nuts are toasted.
  5. Meanwhile, toast the nori in the oven for 2 minutes. Fold the toasted nori in half and shred it finely.
  6. Once the walnuts are baked, sprinkle them with the shredded nori and season with salt and freshly ground black pepper. Store in an airtight container after cooling.
