This makes a great snack or canapé. I have from time to time used the crab mixture in this recipe to make a very mean sandwich.

Ingredients

Quantity Ingredient
1 head baby cos or iceberg lettuce
200g picked, cooked crabmeat
1 1/2 tablespoons kewpie mayonnaise
1 1/2 teaspoons lemon juice
pinch sea salt flakes
pinch ground fennel seeds
handful fresh curry leaves
1 tablespoon grapeseed oil
pinch ground espelette pepper or dried chilli flakes

Method

  1. Remove 8 small crisp inner leaves from the lettuce. Wash the leaves, dry them well and place in the refrigerator until ready to serve.
  2. In a bowl, mix together the crabmeat, kewpie mayonnaise and lemon juice. Season to taste with the salt and ground fennel.
  3. In a saucepan over medium heat, fry the curry leaves in the grapeseed oil until they are crisp and translucent. Alternatively, brush the leaves with a little oil and dry them out in the microwave on high in 15-second bursts of heat until crisp. When crisp, transfer to paper towel to drain. Sprinkle the leaves with a little salt.
  4. Divide the crab mixture between the lettuce leaves and top each with a few fried curry leaves and a sprinkle of Espelette pepper.
