Quick pickle kimchi

This is not a traditional kimchi. The flavours are taken from the kimchi process and applied to marinate fresh vegetables. I particularly enjoy the freshness and crunch that the vegetables retain through this process.

Bean sprouts

Ingredients

Quantity Ingredient
200g bean sprouts
1 tablespoon Kimchi, (base)

Method

  1. Bring a large saucepan of water to the boil and blanch the bean sprouts for 30 seconds. Refresh in iced water. When the bean sprouts have cooled, strain and squeeze the excess water out of them with your hands. Combine with the kimchi base, mixing well.

Green beans

Ingredients

Quantity Ingredient
200g long green beans
1 tablespoon Kimchi, (base)

Method

  1. Bring a large saucepan of water to the boil and blanch the beans for 2 minutes. Refresh in iced water. Strain the beans then pat them dry with paper towel. Slice them lengthways into long thin strips. Mix well with the kimchi base. Serve immediately

Shiso

Ingredients

Quantity Ingredient
12 large shiso leaves
1 tablespoon Kimchi, (base)

Method

  1. Bring a large saucepan of water to the boil and blanch the leaves for 30 seconds. Refresh in iced water then strain in a colander. Lay the leaves on paper towel and dry well.
  2. Take 1 shiso leaf and brush it with the kimchi base. Place another leaf on top of the first and brush with some more kimchi base. Repeat this process until all the leaves have been coated. Leave the leaves to marinate for a few hours in the refrigerator before using. Serve immediately.
