Ingredients

Quantity Ingredient
350g dates, stoned and chopped
1 vanilla bean, split and scraped
500ml double cream
250ml milk
6 egg yolks

To serve

baklava pastries
clear runny honey, for drizzling

Method

  1. Place the dates, vanilla bean, double cream and milk in a saucepan and bring to a simmer over medium heat. Whisk the egg yolks in a large bowl. Slowly add the date-cream mixture then transfer to a food processor and purée until smooth. Return to the saucepan, and cook for 3 minutes over low heat, stirring constantly. Strain through a fine mesh sieve into a bowl, then chill in the refrigerator.
  2. Freeze in an ice-cream machine according to manufacturer’s instructions and use immediately, or transfer to a container and place in the freezer until ready to use.
  3. To serve, scoop the date ice cream over baklava pastries and drizzle with honey.
