This is not a typical Moroccan salad but I saw some inventive female cooks prepare it one day at the riad (traditional Moroccan house) where we stayed.

Ingredients

Quantity Ingredient
1 ripe avocado
1 ripe persimmon
1 ripe mango
2 tablespoons extra-virgin olive oil
1/2 lemon, juiced
finely chopped flat-leaf parsley
sea salt
freshly ground pepper

Method

  1. Stone, peel and slice 1 ripe avocado, 1 ripe persimmon and 1 ripe mango. Place them in a bowl with 2 tablespoons extra-virgin olive oil and the juice of 1/2 lemon. Season generously with sea salt and freshly ground black pepper, sprinkle with finely chopped flat-leaf parsley and serve.
